Ingredients


  • 24 oz spaghetti
  • 2 lbs medium shrimp
  • 2 pints grape tomatoes
  • 1 1/2 cup pesto
  • 4 tbs olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 lemon

Instructions


  1. Bring a large pot of salted water to boil. Cook spaghetti according to package directions until al dente. Save 1 cup of pasta water and drain the rest.
  2. While pasta is cooking, pat dry the shrimp with paper towel. Season with oregano, salt, and pepper.
  3. Heat 2 tbs of olive oil in a large skillet over medium-high heat. Add shrimp in single layer and cook 1-2 minutes one each side.
  4. In the same skilled, after you have finished cooking the shrimp, reduce the heat to medium and add the remaining tbs of olive oil and grape tomatoes. Cool until blistered and burst, stirring occasionally, about 6-8 minutes.
  5. Remove the skillet from the heat and add 4 tbs of pasta water. Scrape up any brown bits.
  6. Add pasta, shrimp, and pesto. Toss well to coat, adding pasta water as needed.
  7. Top with Parmesan cheese, basil, and a squeeze of lemon.

Tips

Dry the shrimp before cooking to sear.
Add pesto after the pan is removed from the heat.
Cook the shrimp until it curls into a C, and O is over cooked.
